To initiate the process, combine sugarcane juice, water, and yeast, allowing them to ferment together. This transformative reaction converts the sugar into alcohol, resulting in a liquid referred to as "wash."
Distillation:
Once the wash is transferred to the still, the application of heat initiates the distillation process, causing alcohol to evaporate and ascend into the neck of the still, where it condenses back into a liquid state within the condenser, separating impurities and enriching the flavors.
Heart Cut Collection:
Through the process of distillation, undesirable compounds are discarded in the "heads," the flavorful essence is captured in the "heart," and lower-quality elements are removed in the "tails."
Filtration, Dilution, and Bottling:
The collected heart cut is filtered to remove remaining impurities. Minimal aging is done for silver rum to maintain a clear appearance. The rum is then diluted with water to the desired proof. Finally, it is bottled, resulting in a smooth, un-aged silver rum.
